Fun Recipe Friday: Butternut Squash Cornbread Muffins

Fall is the perfect time to experiment and make recipes involving butternut squash.  My kids love muffins.....they are perfect in the morning, as an after school snack, or as a side to chili and soup.  I made these muffins last week as a side to a hearty lentil stew.  They turned out great!



Ingredients:
1 1/2 cups cornmeal
1 1/2 cups whole wheat pastry flour (feel free to do a mix of flours to your liking)
2 teaspoons baking powder
1/2 teaspoon sea salt
1 cup baked and mashed butternut squash
1/2 cup almond or oat milk
1/2 cup butter or coconut oil (melted)
1/2 cup maple syrup
2 eggs (if omitting eggs, sub 1/4 cup plain yogurt and 1 tablespoon ground flax meal)
2 tablespoons pumpkin seeds or sunflower seeds

Preheat oven to 375 degrees.  Oil muffin tins or line with muffin liners.  In a medium bowl, mix cornmeal, flour, baking powder, and salt.  

In a mixer, blend squash, butter, maple syrup, and eggs until well blended.  Slowly add dry flour mixture while mixer is on low.  Blend well.

Fill muffin tins full with batter.  Press pumpkin or sunflower seeds into the tops of each muffin.  Bake for 22-28 minutes.  Muffins will still be slight soft to the touch and cracked slightly when done.  Cool 5 minutes before removing from pan.  Serve warm with melted butter.

**Quick meal for baby variation:  make a little extra butternut squash, puree well in a food processor or blender, add a dash of maple syrup, and serve.

Fun Recipe Friday: Sangrita!

Say hello to a fun twist on a yummy traditional sangria.  I didn't think I was a fan of red wine sangria....the idea of red wine being chilled was strange.  But I recently had some in a restaurant that not only was a red wine sangria, but it had tequila!  I have made other sangrias before, so with that knowledge, I created what turned out to be a delicious drink that didn't have an overwhelming tequila taste.

(makes 3.8 liters/134 ounces)
1/2 bottle tequila (half of a 750ml bottle)
1.5 liter bottle of red wine (I like to use red zinfandel)
1 liter (or more) Lemon/lime or citrus flavored soda
1 liter sparkling blood orange soda (Trader Joe's carries it)
2 cups peach schnapps
1 white peach, cut into chunks
1 lemon, cut into slices
1 valencia orange, cut into slices
1 lime, cut into slices
6-8 strawberries, cut in half
Handful of fresh raspberries

Pour all ingredients except the lemon/lime soda into a large pitcher, bowl or beverage dispenser (preferred method if you have one).  Add all sliced fruit. Mix well.  Then top off with the lemon/lime soda until you reach the top of your container.  My container is 134 ounces, so I knew when to stop.  Start by adding a liter and test taste.  If the tequila taste is too strong, add a little more lemon lime soda.  Serve over ice with fresh fruit added.

Fun Recipe Friday: Nutella Grahams

We have officially entered back to school season!  So, ideas are flowing for school lunch ideas and healthy snacks for the kids.  Today, I offer up a perfect, quick after school snack, care of eMeals.  These Nutella Grahams are sure the please the kiddos when they get home from school.

Nutella Grahams

Ingredients:
Graham crackers
Nutella spread 
Wheat germ (feel free to sub ground flax seed or crushed almonds if you don't have wheat germ on hand)


Dip graham crackers in chocolate hazelnut spread and sprinkle lightly with wheat germ. Serve with milk for a little calcium boost!  Nutella does have dairy; if your kids are allergic or dairy intolerant, I have found some good alternative chocolate spreads without dairy at Trader Joe's and Whole Foods.  You can also find healthier versions of graham crackers at these stores, too.

Fun Recipe Friday: Watermelon Popsicles

It's still summer, right?  When eMeals offered up some tempting popsicle recipes, I couldn't resist this one for watermelon.  Although I am not a huge fan, my kids look forward to summer and slice after slice of watermelon.  The best part is these are pain-free and easy to make!

All you will need are popsicle molds.  These are readily available at Target and other stores.  

Simple Watermelon Pops
Ingredients:
4 cups watermelon, seeds removed, cubed
Directions:
Puree Watermelon in a blender.  Pour into your choice of mold and freeze until hardened.

Four Ways to Come Up with a Great Summer Meal
                It’s not uncommon to struggle with creating a new recipe for your next meal. If you’re like me you want to have things planned out because you have a family to feed. So how does one come up with ideas for the next meal? Here are four ways to come up with ideas for your next meal.

1.       Use Seasonal Ingredients – Different seasons offer different foods to form the basis of your next recipe. Using seasonal ingredients helps to keep your food fresh and spurs creativity. For instance there are a number of great tomato recipes that can be made with fresh in season tomatoes.         There is much evidence to support the idea that using seasonal ingredients in your meals actually makes you feel better during each season. When coming up with a new meal first ask yourself what ingredients you will use.

2.       How Many are You Feeding – Before making a recipe always make sure you have a sense of how many people you will be feeding. The size and potions that you will need to feed a group certainly determines what sort of recipe that you should make. Different recipes fit different audiences and audience sizes. Build your meal around the how many people you are feeding.

3.       Listen to Your Taste Buds – Let your taste buds be your guide. Once you have a sense of seasonal ingredients and how many people you are feeding, your taste buds are actually a really good source for leading you in the right direction with your next your recipe. Listen to what sounds good to you for your next meal.

4.       Research and Experiment – In order to come up with new ideas sometimes it is best to gets some inspiration from other sources. Do research and find new ways of coming up with recipes. Eventually these ideas will start to form your own. Also experiment around on your own. Experimentation helps you practice and gives you expose to new ideas for your next meal.

Here is a recipe for your next meal:
Arroz con Pollo y Frijoles
Ingredients
·         2-1/2 pounds chicken thighs
·         1 teaspoon garlic salt
·         1 teaspoon coarsely ground black pepper
·         PAM® Original No-Stick Cooking Spray
·         1 cup long-grain rice, uncooked
·         2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
·         1 can (14 oz each) reduced-sodium chicken broth
·         1 can (16 oz each) Rosarita® No Fat Traditional Refried Beans
·         1/2 cup shredded Oaxaca, Chihauhau or Mexican blend cheese (1/2 cup = 2 oz)


Directions:
1.       Season chicken with garlic salt and pepper. Spray large skillet with cooking spray and heat over medium-high heat until hot. Place chicken, skin side down, in skillet. Cook 7 minutes on each side or until golden brown. Remove chicken from skillet.
2.       Add rice to skillet. Brown rice in pan drippings over medium heat about 2 minutes, stirring constantly. Add undrained tomatoes and broth; blend well. Place chicken on top of rice. Bring to a boil.
3.       Reduce heat; cover and simmer 20 minutes or until rice is tender and chicken is no longer pink. Remove chicken from skillet; keep warm. Drop beans by tablespoons onto rice; sprinkle with cheese. Heat an additional 5 minutes or until beans are hot a
