To get you excited, I am sharing a great recipe for turkey bacon tortilla roll-ups. My kids love roll-ups and this one puts a fun spin on turkey that I know my kids will love.

Turkey Bacon Roll Ups Recipes Back To School eMeals


Turkey Bacon Tortilla Roll-Ups

8 slices bacon
Mayonnaise
1 (8-oz) package store-bought guacamole
4 (8-inch) flour tortillas
1/2  lb thinly sliced deli turkey
1 cup shredded Cheddar cheese (or any shredded cheese)
1 cup shredded iceberg lettuce (optional)
Cook bacon in a large skillet over medium heat until crisp; drain. Spread a thin layer of mayonnaise and guacamole over each tortilla.
Layer turkey, bacon and cheese on each tortilla.
Add lettuce, if desired. Roll up tortillas, and cut in half.
Makes 4 servings.

Chocolate Hazelnut Banana Breakfast Sandwich

Chocolate-Hazelnut and Banana Breakfast Sandwich
Ingredients
  • 8 slices frozen whole grain French toast (prepared)
  • ¼ cup chocolate-hazelnut spread
  • 2 bananas, thinly sliced
Instructions
Cook French toast according to package directions. Spread 1 tablespoon chocolate-hazelnut spread on each of 4 slices of French toast. Top with banana and remaining toast slices.

Let's Tailgate With Buffalo Chicken Cheese Dip

It's football season, which also means lots of tailgating!  My friends over at eMeals has come up with an amazing "Tailgating Menu" for Fall and I'm sharing one with you today. It is a super easy-to-make Buffalo Chicken Cheese Dip.

Ingredients
* ½ cup buffalo hot sauce
* 4 (5-oz) cans chunk chicken breast, drained
* 1 cup ranch dressing
* 2 (8-oz) packages cream cheese
* 1 cup shredded mozzarella cheese
* 2 (11-oz) packages tortilla chips

Combine hot sauce and chicken in a large saucepan; bring to a simmer. 
Stir in ranch dressing and cream cheese; cook 2 minutes or until cream 
cheese is melted. Stir in mozzarella cheese; cook over low heat 10 
minutes or until mozzarella is melted. Serve warm with chips.

Fun Recipe Friday: Nutella Grahams

We have officially entered back to school season!  So, ideas are flowing for school lunch ideas and healthy snacks for the kids.  Today, I offer up a perfect, quick after school snack, care of eMeals.  These Nutella Grahams are sure the please the kiddos when they get home from school.

Nutella Grahams

Ingredients:
Graham crackers
Nutella spread 
Wheat germ (feel free to sub ground flax seed or crushed almonds if you don't have wheat germ on hand)


Dip graham crackers in chocolate hazelnut spread and sprinkle lightly with wheat germ. Serve with milk for a little calcium boost!  Nutella does have dairy; if your kids are allergic or dairy intolerant, I have found some good alternative chocolate spreads without dairy at Trader Joe's and Whole Foods.  You can also find healthier versions of graham crackers at these stores, too.
