Yep, we are rolling up on the back-to-school season. If you're a Mom like me, one of the first things to cross my mind after dizzying school supply lists is lunch ideas. I have three children in grade school this coming year and I will be making a LOT of lunches. I like to do mainly homemade lunches, focusing on healthy choices without being too complicated.
My friends at eMeals always have great ideas and thankfully, they have a back-to-school plan that is sure to make this process a piece of cake. eMeals deliver weekly recipes, completely planned out by day and with a convenient shopping list. With their back-to-school promotion, you will receive 10 bonus recipes to start the school year off right, as well as 20% off your meal plan. Just use the code SCHOOL when purchasing.

To get you excited, I am sharing a great recipe for turkey bacon tortilla roll-ups. My kids love roll-ups and this one puts a fun spin on turkey that I know my kids will love.
Turkey Bacon Tortilla Roll-Ups
8 slices bacon
Mayonnaise
1 (8-oz) package store-bought guacamole
4 (8-inch) flour tortillas
1/2 lb thinly sliced deli turkey
1 cup shredded Cheddar cheese (or any shredded cheese)
1 cup shredded iceberg lettuce (optional)
Cook bacon in a large skillet over medium heat until crisp; drain. Spread a thin layer of mayonnaise and guacamole over each tortilla.
Layer turkey, bacon and cheese on each tortilla.
Add lettuce, if desired. Roll up tortillas, and cut in half.
Makes 4 servings.
