Healthy, Oh-So-Easy Bread Crumbs

Yes, it's Fun Recipe Friday once again.  This one might not uber-exciting, but trust me, you will never buy those highly processed bread crumbs in the store again!

It's only 3 ingredients (plus spices). You will need a mini chopper or food processor.  

Healthy Bread Crumbs

1 cup quick cook oats of your choice (I LOVE barley oats; choose gluten free ones if necessary)
1/2 cup almond meal (available at Trader Joe's and other specialty markets; or look for Bob's Red Mill)
1 cup ground golden flax seed
1 tsp. granulated garlic
1 tsp. parsley
1 tsp. sea salt
1/2 tsp. white pepper
1/2 tsp paprika

Use the mini chopper to grind the oats into a meal. Place in large bowl along with the other ingredients and spices. Toss well.  Store in an airtight container; can be stored in the refrigerator.  

I love these for chicken parmigiana, eggplant parmigiana, homemade chicken nuggets (check out my easy recipe here), homemade mac 'n cheese, and meatloaf.

  1. Meg, thank you for sharing this. My mom was just talking about a healthier version of breadcrumbs, because she has to watch her diet for possible kidney malfunction. So, I pinned and e-mailed to her to share. So, I truly thank you and appreciate this one.

    1. That is so great, Janine. When I look at those store-bought bread crumbs, I simply wince. These are great because you are getting so many nutrients, it can be gluten free, and no fat!
