I swear I didn't look at Pinterest to come up with this idea! But it's pretty much a guarantee that anything you throw in a pocket of bread will be a success for your family. I was a little worried that the amount of vegetables in this recipe might turn them away. That was not the case.....they loved them!
Chicken Pot Pie Calzones
Makes 10
Ingredients:
Pizza dough (I don't necessarily have a tried and true recipe; I often use the ready-made dough from Trader Joe's or you can try this recipe on Pinterest)
1 large boneless chicken breast
2 tablespoons olive oil
1 tsp. sea salt
2 tsp, black pepper
1 tsp. basil
1/2 tsp. tarragon
1/2 tablespoon garlic
1 tablespoon dried onion
1 green onion
1 carrot, finely diced
1 cup fresh spinach
1/2 cup chopped cabbage
1/2 cup peas
3/4 cup unsweetened coconut milk (or milk of your choice without flavor or sugar)
1 tbl. corn starch or 3 tablespoonds tapioca flour
Prepare the sauce: in a small sauce pan, add milk, half the salt, half the pepper, half the dried onion, half the dried garlic, and the corn starch or tapioca flour. Whisk well over medium low heat until thick, but not too thick. If it seems to pasty, add a little milk. You want a creamy, smooth mixture. It will thicken more as it cools. Set aside.
Cut your chicken into one inch chunks and saute with half the olive oil until cooked. Set aside. In large frying pan, use remaining olive oil; add green onion and carrots and cook for 3-4 minutes, stirring frequently. Next, add the cabbage and peas and saute for an additional 1-2 minutes. Finally, add the fresh spinach, prepared sauce, and re-add the chicken and all the remaining spices. Saute for 1-2 minutes.
Roll out your dough thin and cut into section about 5-6 inches wide. Spoon mixture into each (don't by shy!) and fold over, rolling and tucking the edges. Cook at 400 degrees for 15-17 minutes.
