I'm right there with ya. You're a Mom who wants to feed her family healthy, home-cooked meals. In our increasingly busy lives (both for ourselves and our children), it is sometimes hard to plan a meal. Well, I am here to share one of my all-time favorite recipes to cook for my family. It takes minimal time and prep work. It's got some hidden veggies in there that blend perfectly.Best of all, everyone in my family enjoys it!
These sloppy joe's are fast....and I mean SUPER FAST to make....brown the meat, add the sauce, spices, and shredded veggies, and you're done. I would not say it was fast and easy if it truly wasn't. And isn't that what all us Mom's need from time to time?
Modern Sloppy Joes
Ingredient List:
1 lb. organic ground beef or organic ground turkey
1 can tomato sauce (sugar free if you can get it)
1 carrot, shredded
3/4 cup zucchini, grated
1/2 red pepper, grated or pureed in a food processor
1/2 cup spinach (optional)
1 tbl. chili powder
1 tsp. sea salt
1/2 tsp. black pepper
1 tsp. paprika
1 tsp. oregano
2 tsp. powdered garlic
1 tbl. dried onion OR half of a small onion finely diced
1 tbl. worcestershire sauce
1 tbl. rice vinegar or apple cider vinegar
1/2 tsp. cinnamon
Dash of cayenne pepper (optional if you don't like it too spicy)
Feta cheese crumbles for topping
1. In a large saucepan, brown the meat over medium heat in a little bit of olive oil.
2. Once the meat is browned, add all the veggies and continue to cook over medium heat for 3-4 minutes.
3. Add tomato sauce and all the spices and stir well. Reduce heat to medium low and continue to cook for 2-3 minutes. *Note: if you don't like your sloppy joe's too "sloppy", you can cut back on the tomato sauce a bit.
4. Serve on your favorite buns and top with the crumbled feta cheese. Goat cheese also works great!
I sometimes double the recipe and use half for dinner the night I cook it and freeze the other half for dinner another time. It heats up great!
