Wow, have I got a fun recipe for you today. A savory homemade waffle mix meets cheesy goodness. This one is sure to be a crowd pleaser for kids and adults alike. What makes this recipe special is that you create the sandwich with waffle batter, not pre-made bread that you add to the iron. Trust me, you will want to make these!
Here is what you'll need:
Grilled Cheese Waffles
1 cup sifted flour of your choice ( used a mix of whole wheat and spelt)
1/4 rolled, quick cook oats of your choice
1 tsp. baking powder
1/2 tsp. sea salt
1 tsp. granulated garlic
3 tbl. flax seed
1 tsp. basil
1/2 tsp. chili powder
1 tsp. parsley
1-1 1/2 cups milk of your choice (I used unsweetened almond milk)
2 tbl olive oil
Cheddar cheese, thinly sliced
Preheat your waffle iron with a light coating of oil. Through a sifter, mix flour, baking powder, salt, and garlic. Then, gently mix in oats, flax seed, garlic, basil, chili powder, and parsley. Mix in milk and olive oil. Your mixture should be on the thinner side, but not too thin.
Drop about an 1/8 of a cup of batter in one cut-out of your waffle iron. Quickly layer a few pieces of cheese, then a little more batter. Repeat this step until your waffle iron is full (I have a four-section iron). Cook for about 2-3 minutes (they tend to cook pretty quickly!). Cut into triangles and enjoy!
Bonus: this savory waffle mixture also works great for sandwiches! Cook them off and keep in the fridge until you need them.
