Fun Recipe Friday: Homemade Chicken Nuggets

Homemade chicken nuggets? Yes!  They are so easy, you can make a bunch at one time and freeze what you don't use right away, and the best part.....your kids will L-O-V-E them.  Bonus: the breading is super nutritious and healthy.
Here's what you'll need:

2 large boneless chicken breasts, sliced in half and cut into 2 inch pieces
1/4 finely ground crackers (preferably whole grain)
1/3 cup whole wheat bread crumbs
1/3 cup barley, spelt, or other variety of oats, minced in a mini food processor
3 tbl. ground flax meal
2 tsp. ground garlic
1/2 tsp. sea salt
1/2 tsp. white pepper
1/2 tbl. dried onion
1 tsp. paprika
3/4 cup fresh spinach or kale, finely minced in a food processor (optional)
1 egg
1/3 cup coconut milk (or milk of your choice)
1 tbl. lemon juice
Olive oil

Cut your chicken into pieces (as described above).  In one bowl, mix the bread crumbs, ground crackers, ground oats, spinach (if applicable) and all spices.  In another bowl, combine the egg, milk, and lemon juice.  In a large frying pan, add about 2 tablespoons of olive oil and begin heating over medium heat.

Dip chicken pieces in the egg mixture, then coat with the crumb mixture.  Transfer to a plate.  When all are coated, gently place in frying pan and cook on each side about 3-4 minutes, until lightly browned on each side (you are not fully cooking the chicken at this time).  

To cook, heat an oven or toaster oven to 400 degrees.  Cook your nuggets for about 8-11 minutes, until thoroughly cooked.  Don't overcook!

You can freeze what you have leftover, but I recommend cooking them and then freezing them.
