I love Chipotle Peppers. I never get sick of them. I love the smoky spicy heat and they make great marinades. It was prefect for my skirt steak. I decided to use hard shell tacos instead of soft and served these tasty tacos along side some cilantro-lime rice. They were delicious!
Chipotle Lime Steak Tacos
Makes 8 Tacos
Cal 148, Fat 9g, Carbs 8, Fiber 1g, Protein 13g (Per Taco)
Ingredients
1 lb skirt steak, trimmed
1 tsp cumin
1 tbsp brown sugar
Juice of one lime
2 Chopped Chipotle Peppers in Adobo, plus 2 tsp sauce
8 Taco Shells or Soft Tortillas (We used Ortega Whole Grain)
Shredded Cheese, Cilantro, Lettuce, Tomatoes, Sour Cream, Green Onion (For Toppings)
In a small mixing bowl combine cumin, brown sugar, lime juice, and chipotle peppers. Combine well and pour over steak. Cover your steak and place in the fridge. Marinate for about 1-2 hours. Grill steak 4-5 minutes per side or until desired doneness (we like medium rare) Slice steak and assemble tacos. Enjoy!
