Product Review: Fresh Express 30 Day Salad Swap

As many of my regular readers know, I like to create fun recipes on my blog that are geared toward easy, healthy choices that are family friendly.  As my recipes prove, I have some pretty creative ways to sneak in veggies for your kids and to make meals low fat and delicious.  

So, when I had the opportunity to review Fresh Express and try their challenge, the 30 Day Salad Swap, I was excited.  My family, including my kids, love salad, but exchanging it within a meal was a new angle for my family.

In 1989, Fresh Express created the very first ready-to-eat, packaged garden salad available in grocery stores nationwide. For me, I really liked hearing that they did have organic options.  The salads come pre-rinsed and ready to eat.

They enlisted the help of Mom's Meet to spread the word about this great program! The idea is to take traditional meals and replace some of the ingredients with salad to make them lower fat and lower in calories.  For example, instead of eating a huge cheeseburger, you can create a cheeseburger salad and crumble the inner parts of the burger in your salad and omit the bun.  Another great idea is in lieu of a huge plate of pasta, go half pasta, half salad.  This works great with bite size pasta, like penne.

So, I know what some of you might be thinking.  My kids are slightly picky eaters, how am I going to get them to eat salad?  I've got 2 great ideas for you that worked for my family.

Idea 1:  Cheesburger Salad.  I mentioned this recipe above.  But to make it kid friendly, just add the crumbled beef and cheese.  Serve with french fries either tossed in the salad or on the side.

Idea 2:  Chicken Nugget Salad.  You can use either homemade chicken nuggets or store bought.  Cook them per directions and dice them into small pieces.  Add some kid-friendly ingredients like Goldfish crackers, sliced olives, shredded cheese, raisins, cranberries, apples, and their favorite dressing. With this and the previous salad, my kids have to have a "crunch" to their salad, so I add croutons, crushed crackers, or crumbled tortilla chips.
